The Melting Point of Vitamin B1 is 196-200℃. Vitamin B1 is a colorless compound which is white or almost white crystalline powder or small colourless crystals. Its structure contains a pyrimidine ring and a thiazole ring linked by a methylene bridge. Vitamin B1 is soluble in water, methanol and glycerol, and practically insoluble in acetone, ether, chloroform, and benzene. Vitamin B1 is stable at acidic pH, but is unstable in alkaline solutions. Vitamin B1 is unstable to heat, but stable during frozen storage. Vitamin B1 is unstable when exposed to ultraviolet light and gamma irradiation. Vitamin B1 reacts strongly in Maillard-type reactions.
